This sugar cookie recipe is great because you don’t need to chill the dough!! I love making these cookies for days that just need a little fun, or to celebrate Dr. Seuss’ Read Across America Day as they remind me of Oh, The Places You’ll Go!
1 c. (two sticks) of unsalted butter, softened
1 1/2 c. confectioner’s sugar
1 egg
2 1/2 tsp. vanilla extract
1/2 tsp. almond emulsion
2 3/4 c. all-purpose flour
2 tsp. baking powder
1 tsp. salt
Gel dye
Nonpareils
Cream together softened butter and confectioner’s sugar. Crack the egg into a separate bowl, and add the flavoring. I use emulsions, but extract also works well. Add that to the butter sugar mixture and mix until the egg is thoroughly incorporated. In a separate bowl, sift together the flour, baking powder, and salt, then add little by little to the mixture. I can tell the dough is ready when it no longer sticks to the sides of the bowl. When I touch it, it has a little give, but does not stick to my fingers.
Divide your dough evenly into 4-5 bowls (I only used 4 colors but you could use as many as you want).
Take one ball of dough and put it back into your mixing bowl and add in desired food coloring – repeat with the remaining cookie dough.
Take a grape-sized ball of each color of dough and press them together into a ball and roll it between your palms really fast (it’ll look like a small beach ball). Then take that beach ball and roll it out into a cylinder (mine were about 10 inches long) – at this point, I should have cut it in half to make two cookies but you chose to make larger cookies. Coil the cylinder into a round cookie shape and then roll the edge of a cookie in a bowl of nonpareils.
