Sourdough Discard Pancakes

When J got the Blackstone griddle for Christmas, I set out to find the perfect sourdough pancake recipe. After LOTS of trial and error, I think I found the recipe we like the best!

Sourdough Pancakes

2 c all-purpose flour
1 c sourdough discard (more or less is fine) 
1 t baking soda
2 t baking powder
3 T sugar
1 3/4 cups milk 
2 large eggs
2 T oil 
2 t vanilla 
1 t salt 

Combine all the ingredients. 

Let sit for 5 minutes (or more), while the griddle is heating up. I have found on the Blackstone, that 450 degrees is the temperature I like to work with. 

Use a scoop or measuring spoon to make sure you have the same amount for each pancake. This will give you nice, consistently round pancakes every time. 

Let the pancake bubble throughout, (about 2-3 minutes), and flip. 

Butter and serve with warm maple syrup!
