Over the last few months I've been baking a loaf of sourdough bread each week. When I first started this rhythm, I had a hard time figuring out when I should feed my starter and start mixing my loaf of bread. Now that I've had a little bit of practice, I have a good rhythm of when I should be start depending on when I want to have my loaf of bread ready. I'm hoping this helps you out!
In the morning (Day 1): feed starter
In the evening (Day 1): Mix the dough and perform all stretch and folds
Overnight: Let the dough bulk ferment
In the Morning (Day 2): Shape your dough and place it in the fridge for its cold proof
After at least an hour, up to 24 hours: Bake bread
TO BAKE BREAD IN THE EVENING:
Before bed (Day 1): feed starter
