I always thought these cookies were just so cute, but we never made them as a kid- just the regular peanut butter cookies. Now, I can't imagine a Christmas cookie tray without these included on them.
Peanut Butter Blossom Cookies
1/2 c Peanut Butter
1/2 c butter
1/2 c sugar
1/2 c brown sugar
1 egg
1 t vanilla
1 1/3 c flour
1 t baking soda
1/2 t salt
24 Hershey Kisses, unwrapped
1/4 c sugar
Preheat oven to 350.
Cream together peanut butter, butter, sugar and brown sugar until smooth.
Add egg and vanilla and beat until smooth.
Slowly add dry ingredients to the creamed mixture, beating until incorporated.
Roll into 1" balls, then roll in the prepared dish of sugar.
Place cookies on a baking sheet.
Bake 12-14 minutes.
Place a Hershey Kiss in the center of each cookie while still hot.
