Chocolate Chip Cookies | 12 Days of Cookies

When I was in 4th or 5th grade I needed to make some extra money to go to a summer camp. I wasn't old enough to babysit, but I could make a good chocolate chip cookie.

I know I always had an entrepreneurial spirit in me, but this is my earliest memory of running a business. I collected orders for a dozen of homemade chocolate chip cookies for $5. I walked our street and collected orders, and thank goodness we lived in a small cul-de-sac where everyone knew us, because it would have crushed my little spirit to return home without orders.

Anyways, between the kind neighbors and the people at our church, I was able to collect enough orders and have enough profit left over to send myself to camp!

Over the years, this has been a recipe I've made countless times. It's engrained in my brain and I still think it's a pretty stinking good chocolate chip cookie. Chewy. Chocolatey. and goes great with a cup of cold milk.

If times get real hard, I'll take this recipe down and start selling cookies again. ha! For now, it will remain a constant holiday cookie, but also a random Thursday cookie.

PS. This dough also freezes well. There's rarely a time I don't have this cookie dough in the freezer for times we just need a few warm cookies.

Chocolate Chip Cookies

1 c butter, softened
1 c white sugar
1 c light brown sugar, packed
2 t pure vanilla extract
2 eggs
3 c flour
1 t baking soda
1t salt
1 bag of chocolate chips (or around 2 cups)

Preheat oven to 350 degrees F.
Cream together butter and sugars until combined. Beat in eggs and vanilla until fluffy.

Mix in the dry ingredients until combined.

Fold in chocolate chips and mix well.

Using a cookie scoop, make your cookies!

Bake in preheated oven for approximately 8-10 minutes.

Let them sit on the baking pan for a few minutes before putting on a cooling rack. *This is the secret. Undercook them just barely, and let them finishing cooking on the pan outside the oven!*
