Rhett's favorite meal is breakfast and I can't say I blame him! It's his daddy's favorite meal, too. We usually eat some form of eggs, biscuits, bacon, and fruit, but I noticed the skin around his mouth got red the first time giving him eggs, so I haven't tried them again. I started looking for an easy breakfast recipe that I could make ahead and mashed up several recipes until I got this!

These easy baby pancakes are super yummy! I cut them in palmer size pieces and serve them with bananas, avocado slices, or smashed blueberries and yogurt. He loves them and honestly, I eat them too when I'm not feeling like making myself breakfast.

Baby Cakes
 
1 1/2 C rolled oats 
1/2 C applesauce (no sugar added kind)
1 t baking powder
1/2 t baking soda
1 t vanilla 
1/2 C almond milk

In a blender, blend 1 1/2 cups rolled oats until they are finely ground. 

Stir in the remaining ingredients. 

Using coconut oil on your griddle, spoon silver dollar sized cakes to cook. Flip after 2-3 minutes or until one side is golden brown, then cook another 2-3 minutes. 

I usually get about 6-8 baby pancakes. I store them in an airtight container, or a freezer bag, and warm them at breakfast.
