Freezer & Crockpot Friendly White Chicken Chili

This is one of those recipes you just memorize and make a few times a year. I have to say this is the first time I've actually written it down instead of just throwing the stuff in the crockpot and leaving it. I've seen some recipe circulating that adds corn to their chili, while there's nothing wrong with that, I don't add it to ours.... but you do whatever your family will eat! ;)



Freezer & Crockpot Friendly White Chicken Chili

2-4 boneless skinless chicken breasts
1 C chopped onion
2  cans great northern white beans, rinsed and drained
2 cans diced green chiles
2 T garlic minced
2 t cumin
1 t chili powder
salt to taste
2 C chicken broth

Crockpot Instructions:
Dump everything into the crockpot and cook on low for 6-8 hours or high fro 3-4 hours. Remove chicken and shred or cube and place back into the crock pot. 

We serve this with cilantro, avocado, limes, tortilla chip, plain Greek yogurt or sour cream, and shredded cheese!

Freezer Instructions: 

Dump everything EXCEPT CHICKEN BROTH into a freezer bag. Freeze flat. 

When you're ready to eat, thaw in the fridge overnight. Dump the contents of the bag in the crockpot and add 2 C chicken broth. Follow crockpot instructions.
