106 Meals in 4 Hours

I know there's only like four people who actually read this "blog" and I'm super grateful! It gives me an outlet to show some of the projects we've been working on in our house, but also a place where I can refer back to things that I've tried and want to keep using in our home. So, if you're apart of my little tribe, thanks so much. You're the MVP.

In case you've missed it, I am currently what feels like 9,000 months pregnant and ready to meet this little man any day now. In the mean time, I want to make sure we have most things prepared before his arrival.


The nursery is done.

The clothes are washed.

The diaper bag is packed.

The carseat is installed.

And now, the meals are prepared.

The last thing I want to be worrying about with a new babe is what we're going to be eating or how we need to be going to the grocery store.... especially in winter months. In about 4 hours, my mom and I tackled almost 30 freezer dump meals and made roughly 106 meals.

Here's how I figured 106 meals if you're wondering how I fit it all in my freezer. Ha! Most recipes have four servings, making it four meals (2 at dinner time and then 2 more for leftover lunches). J will take a breakfast burrito and a piece of fruit or a breakfast sandwich in the mornings so 20 burritos stretch out for 20 days.

Chicken Pot Pie
Tuscan Chicken Pasta
White Chicken Chili
White Chicken Enchiladas
(For my white chicken enchiladas, I don't fry my tortillas before rolling them into burritos. I freeze this in a 9x13 foil pan and cover with foil. Thaw a day before in the fridge and bake on 375, covered with foil for 30 minutes, and then 15 minutes uncovered.)
Tex Mex Chicken
Bacon Wrapped Pork Tenderloin
Apple Bourbon Pork Tenderloin
(Okay,  I kind of cheated on this apple bourbon pork tenderloin! ;) I sliced 2-3 apples and one red onion and put in a freezer bag with the pork tenderloin and a package of apple bourbon slow cooker sauce from Aldi. Dump in the crockpot on low for about 6-8 hours.)
