When J and I first got married, we ate this ALL. THE. TIME. I mean, it was in our meal plan rotation more than it probably should have been. We finally got burnt out of it and I didn't make it for over a year. We saw a package of mongolian beef at Trader Joe's and J asked if I would make this again. It's still super easy to throw together, light on the budget, and really yummy!
Crockpot Broccoli and Beef
1-2 lbs Stew Meat
2 T cornstarch
2 Red Peppers, cut in slices
1 Onion, diced
1 T garlic
1 T sesame oil
1/4 C low sodium soy sauce or coconut aminos
1 C beef broth
1 package Steam-able Broccoli
Coat the stew meat in 2 tablespoons cornstarch before putting into crockpot. Add red peppers slices, onion, garlic, sesame oil, beef broth and soy sauce.
Cook 4-5 hours on high or 6-8 hours on low.
Before serving, microwave the steam-able broccoli and add to the crockpot. Stir gently to combine.
Serve over rice or cauliflower rice.

Dump everything into crockpot. Add beef broth and follow cooking instructions above.
