Crispy Ranch Chicken

One of my favorite scriptures is found a few verses after the Lord filled over 3,000 people with His Holy Spirit (Acts 2:38). It's Acts 2:46, ...

"They broke bread in their homes and ate together with glad and sincere hearts"

Every Sunday afternoon we serve lunch to those who joined for Sunday morning service. It's a fun time to eat together, talk about what they thought about the service, and learn more about who Jesus is.

This recipe is one that I have used several times because it's so easy and everyone really likes it. I throw a little salad and some dinner rolls together and we're golden. 



Crispy Ranch Chicken

4 boneless, skinless chicken breasts 
1 packet ranch dressing mix 
1 1/2 cups greek yogurt 
1/2 cup panko bread crumbs 
1/4 cup parmesan cheese 
1 t garlic salt 

Mix 1 packet of ranch dressing mix and 1 1/2 cups greek yogurt in a ziplock bag. Place chicken breasts in the bag and completely coat at the chicken. I typically let the chicken marinate overnight, but you don’t need to. 

Combine panko bread crumbs, parmesan cheese, and garlic salt. Dip the marinated chicken in the mixture and place on a lightly greased pan. Bake 30-40 minutes at 350 degrees.
