30 Minute Dinner Rollls

In The Oliver Family Cookbook, J's grandma has a lovely recipe for dinner rolls. If I have the time, I will make them her way because they are amazing! But, more times than not, I am in a rush and use this tried and true 30 minute Dinner Roll recipe.

We have dinner with our friends, Josh & Kait frequently and I know I'll always be asked to make these if we're going over there, or just have them ready if they're coming here.



30 Minute Dinner Rolls 

1¼ cups warm water
¼ cup sugar
2 T. yeast 
⅓ cup oil
1 tsp. salt
1 egg
3½ cups flour

Dissolve yeast in warm water and sugar in a large mixing bowl. Add in oil, salt, egg and flour. Mix using the dough hook until combined. (Add a little extra flour if dough is too sticky.)

Shape immediately into about 15 rolls and place in a greased 9x13" cake pan. Let raise for about 15-20 minutes.

Preheat oven to 375ºF. Bake rolls for about 15-20 minutes. 
Spread butter on the tops of cooked rolls for a finishing touch. 

A few things I've learned along the way: 
1. Yeast at Costco is cheap. Like wayyy cheap than any yeast packets you can find at a regular grocery store. 

2. If your rolls are too dense, next time, knead a little more. If they're still dense, make sure your yeast isn't expired.
