At the start of every year, our church completes the Daniel's Fast. There's a long list of foods you are giving up for the fast, but that list is far too long to write out. Basically, you're only allowed to eat fruits and vegetables.
A few years ago, we were craving something that tasted like a real treat, but still in line with our fast. Our go to snacks are typically chips & salsa or popcorn, but jars of salsa typically have sugar (which was a no no), Quickly, I threw these ingredients into a blender and whipped up these easy, but oh so satisfying salsa that we continue to enjoy even off the Daniel's Fast!
Now, when J is doing a Fantasy Football draft or we have a large group of people coming over, this salsa gets requested! It's probably one of the easiest recipes to throw together for a crowd.
Fresh Game Day Salsa
2 cans Rotel
1/2 chopped onion (I use red, but white or yellow will work, too)
1 jalapeƱo (you can seed it to make it less spicy)
1/3 bunch of cilantro
1/2 t garlic powder
1/2 t salt
1/2 t cumin (I LOVE Cumin. This may be overpowering for some, so use 1/4 t)
1/2 lime juice
Throw everything in the food processor or blender and pulse a few times. I typically do it between 5-8 pulses. Refrigerate for an hour before serving if you can!
