One of our FAVORITE meals ever! I can always get 2-3 meals out of one bird so I love that this makes meal time faster for me. Check out some of the recipes below for things I do with leftovers from this chicken.
Instant Pot "Rotisserie" Chicken
1 whole bird, thawed
1 onion, cut in half
1 lemon, sliced
Trader Joe's 21 Seasoning Salute
1 IPA or Lagar or 11 oz water
Stuff the chicken with lemon and onion. Season bird with Trader Joe's 21 Seasoning Salute.
Pour in beer and cook on chicken setting (~28 minutes) until internal temperature is 165.
Place in dutch oven and place in the oven under broil for 5-10 minutes until skin is brown!
